Ingredients:  &lt;br /&gt;
* one medium to large leek&lt;br /&gt;
* one container of fresh mushrooms&lt;br /&gt;
* couple cloves garlic&lt;br /&gt;
* olive oil&lt;br /&gt;
* 2 eggs&lt;br /&gt;
* 2 T flour&lt;br /&gt;
* tarragon, basil, salt, pepper&lt;br /&gt;
* dash Tabasco&lt;br /&gt;

Wash the leek well, chop fairly small.  Slice the garlic into thin slices.  Heat up a frying pan, put several T olive oil in it, and fry the leeks and garlic together.  As soon as the leeks and garlic are covered in oil, reduce the heat in the pan to a simmer and let them sweat 10 minutes or so, until they are soft.&lt;br /&gt;
&lt;br /&gt;
In the meantime, clean and slice the mushrooms.  When the leeks are soft, add the mushrooms and the herbs, and let cook  on a low heat until the mushrooms soften, about 5 more minutes.  Remove from heat and transfer to a mixing bowl.&lt;br /&gt;
&lt;br /&gt;
Once the fried mixture has cooled, add salt and pepper to taste, a dash of Tabasco and the two eggs.  Mix until it is uniform, then start adding flour while stirring until the mixture is &amp;quot;thick enough&amp;quot;.  It should be like a medium-thick cookie dough.&lt;br /&gt;
