Dry the tofu slices very well on paper towels.  The dryer, the better.  Squeeze them between paper towels to extract even more water.&lt;br /&gt;

Put a generous amount of oil in a frying pan, bring to frying temperature and put the tofu in to fry.  Let the pieces get browned and flip them so that both sides are browned lightly.&lt;br /&gt;
&lt;br /&gt;
Take the pieces out and let drain of oil (on paper towels, or on a strainer).&lt;br /&gt;
&lt;br /&gt;
Make a marinade of soy-sauce, ginger, garlic and sugar and pour over the tofu in a sealable container.  Let sit a few hours before eating.&lt;/div&gt;</summary>
