* 1 clove garlic, crushed&lt;br /&gt;
* 1/2 tsp salt&lt;br /&gt;
* 1 lemon&lt;br /&gt;
* 1/2 cup water&lt;br /&gt;

Put the raw techina in the food processor along with the garlic, salt and half the lemon juice.  Give it a whirl and notice that it gets thick.  Add half the water and see it thin out again.  Alternate adding lemon juice and water -- and adjust the amount of water to get the consistency you want (it tends to thicken upon standing, so make it somewhat looser than you ultimately want it).&lt;br /&gt;
