Get a whole buri (mullet).

Season it lightly with salt, pepper, olive oil and za'atar. Bake at 200C for 30 minutes and let cool, then de-bone and sprinkle with lemon juice.

You can make some caper mayonnaise to go with it, should anyone feel like it (I like capers!).
