This is an old recipe I found and modified, which is simple and very tasty!
Ingredients:
- 1 C pitted and chopped dates
- 1 C chopped sugared pecans
- 1 C boiling water
- 1/2 C oil
- 1 C brown sugar
- 1 t vanilla
- 1 T rum
- 1 egg
- 1.5 C whole wheat flour
- 1 packet baking powder
Preheat oven to 180C (350F).
Put water to boil, in the meantime chop and pit the dates. Put the dates in a Pyrex mixing bowl and pour the boiling water over them. Add the brown sugar, and let sit until warm. Add the oil, vanilla, rum and half the flour -- stir until uniform. Add the egg, baking powder, nuts and remaining flour and mix until uniform.
