An extremely easy, attractive and tasty relish:
- 1 cup water
- 1 cup sugar
- 1 tsp red-pepper flakes
- a dozen or so kumquats
Rinse and slice the kumquats in thin slices, removing the seeds. In the meantime, bring the water, sugar and red-pepper to a boil.
When the kumquats are ready, just put them in the boiling syrup. Simmer until the solution gets thicker (about 40 minutes).
Cool and put in a container for later use.
