Techina is very simple to prepare. You need:

  • 1/2 cup raw techina (you need to stir it before using, as the sesame separates out). Use more if you want larger quantities
  • 1 clove garlic, crushed
  • 1/2 tsp salt
  • 1 lemon
  • 1/2 cup water

Put the raw techina in the food processor along with the garlic, salt and half the lemon juice. Give it a whirl and notice that it gets thick. Add half the water and see it thin out again. Alternate adding lemon juice and water -- and adjust the amount of water to get the consistency you want (it tends to thicken upon standing, so make it somewhat looser than you ultimately want it).

To make "green" techina, just make techina and add a handful of parsley and/or cilantro (cusbara) chopped fine.
