Recipes/Leek and Mushroom pashtida

A pashtida is a sort of quiche.
Ingredients:
- one medium to large leek
- one container of fresh mushrooms
- couple cloves garlic
- olive oil
- 2 eggs
- 2 T flour
- tarragon, basil, salt, pepper
- dash Tabasco
Wash the leek well, chop fairly small. Slice the garlic into thin slices. Heat up a frying pan, put several T olive oil in it, and fry the leeks and garlic together. As soon as the leeks and garlic are covered in oil, reduce the heat in the pan to a simmer and let them sweat 10 minutes or so, until they are soft.
In the meantime, clean and slice the mushrooms. When the leeks are soft, add the mushrooms and the herbs, and let cook on a low heat until the mushrooms soften, about 5 more minutes. Remove from heat and transfer to a mixing bowl.
Once the fried mixture has cooled, add salt and pepper to taste, a dash of Tabasco and the two eggs. Mix until it is uniform, then start adding flour while stirring until the mixture is "thick enough". It should be like a medium-thick cookie dough.
Transfer to an oiled baking pan, and bake at 180C until done, about 45 minutes
