Recipes/Maxine's Carrot Cake

• 1.5 C oil
• 2 C sugar
• 4 eggs
• 2 C flour
• 2 t baking-soda
• 2 t cinnamon
• 1/2 t salt
• 3 C grated carrots

Blend oil and sugar, beat in eggs one at a time. Sift and add dry ingredients. Mix in carrots. Pour into greased pan and bake 75 minutes.

Lighter version: use 1C of oil and 3/4 C sugar, 3/4 C brown sugar
