Take a block of firm tofu and rinse it, then slice it into thin slices (about 1/2 cm, or 1/4 inch thick).
Dry the tofu slices very well on paper towels. The dryer, the better. Squeeze them between paper towels to extract even more water.
Put a generous amount of oil in a frying pan, bring to frying temperature and put the tofu in to fry. Let the pieces get browned and flip them so that both sides are browned lightly.
Take the pieces out and let drain of oil (on paper towels, or on a strainer).
Make a marinade of soy-sauce, ginger, garlic and sugar and pour over the tofu in a sealable container. Let sit a few hours before eating.
